Brownie Oatmeal Drops


so, it seems that a few people would like my special one-point cookie recipe! can't say i blame you. i take no credit for this recipe, i got it from weight watcher's 2005 recipe book, which i am borrowing from my friend. ready freddy? here we go...

Brownie Oatmeal Drops

1/4 cup butter
1 oz unsweetened chocolate, chopped
1 cup sugar
1/2 cup unsweetened cocoa
2 large eggs
2 tsp vanilla extract
1 cup uncooked regular oats
1/4 cup flour
1/2 tsp baking powder
1/8 tsp salt
cooking spray

-preheat oven to 350 degrees.

-microwave butter and chopped chocolate in a small bowl for 35 seconds, or until chocolate just beings to melt. stir until smooth.

-beat chocolate mixture, sugar and the next 3 ingredients in a large bowl until smooth.

-combine oats, flour, baking powder, and salt; add to butter mixture, stirring just until blended. drop by rounded teaspoonfuls 2 inches apart onto cookie sheets coated with cooking spray.

-bake at 350 for 8 to 9 minutes or until cookie centers are almost done. cool 5 minutes on pans, then remove from pans and cool completely on wire racks.

yields: 30 cookies.

each cookie: 67 calories, 2.7g fat, 10.4g carb, 0.9g fiber = 1 weight watchers point.

i didn't happen to have any unsweetened chocolate on hand, so i just used some super dark chocolate and didn't add as much sugar to the recipe. the trickiest part for me was making sure that there were 30 cookies all together so that the nutrition info would be accurate. i ended up making 26 cookies (and yes, they are quite small), but i'm thinking that dividing 4 extra cookies up between 26 isn't going to make much of a difference.

Hmmm...wonder how they would taste if baked using Splenda? Just a thought...Splenda is supposed to be really good in baked goods.

I have made these 5 times now and every time I make them people love them! The portions are hard for me to figure out to - this time the batch made 36! :)
